Blueberry and nut banana bread: sugar and gluten free

Do your bananas often just turn brown ?

Do you love blueberries? ?

Then this' bread 'is very tasty and ideal for breakfast or as a snack. (Then take a smaller piece as it fills quite a.) And most importantly, you don't have to be a kitchen princess for it again !  ;)

You can store perfectly for a few days in the fridge or in slices in the freezer. Insert a little parchment paper between each slice, otherwise the tin stick together.

Ingredients:

- 3 (very) ripe bananas, mashed with a fork. 

- 120 g almond flour

- 100 g coconut flour - for those who are not such a fan of coconut: the same amount of mixed oatmeal is equally good !

- 2 eggs (if you have big bananas and small eggs: make 3 of them)

- a cup of blueberries (may be frozen)

- 1 tsp baking powder (also exists gluten free)

- 1 tsp vanilla extract

- 2 tbsp chia seeds, soaking in water for at least fifteen minutes

- 1 tsp cinnamon

- 1 tbsp liquid honey, for those who want it a little sweeter - the riper your bananas, the sweeter it tastes

- coarse sea salt or himalayan salt (see photo for those who have no idea what I'm talking about - it's pink in color)

- for finishing: chopped nuts (not too finely chopped - no walnuts, because they burn quickly - pecans are very suitable and easy to chop even with a knife)

Preparation:

Mash the bananas with a fork, in a bowl. Mix all the ingredients in it. (Order of no importance, alternate wet and dry ingredients a little, for convenience.)

Grease a cake mold or use parchment paper. (If I always do, you always get your results out of your shape very easily.)

Pour in your batter and distribute some evenly. 

As a topping, press the chopped nuts into it. 

Place your batter in a preheated oven for about 40 minutes at 180 degrees. (Keep an eye after 30 minutes, depends heavily on your oven and cake mold !) It should not be too dry, because if you let it cool down in your shape, it dries out further inside.

If you want to vary: add a spoonful (or more) of raw cocoa powder to your ingredients. Then your result tastes   to chocolate with banana and blueberries. Yummie !
