1.    Avocado veggie Panini
Ingredients:
o    1 ½ tablespoon butter or olive oil
o    1 grind allium cepa (onion or garlic works too)
o    8 ounces sliced baby portobello mushrooms
o    1 cup  grape tomatoes or cherry
o    2 cups chopped kale, stems separate
o    salt to taste
o    2 avocados
o    8 pieces thick, solid wheat bread
o    melty white cheese, if you want
How to make:
o    Heat the butter in a frying pan above medium-high heat. Add the allium cepa; deep fry until translucent. Add the mushrooms and deep fry until browned lightly on the surface. Add the tomatoes and kale; deep fry until drooping and warmed through. Disconnect from heat and season with salt.
o    Crush the avocado in a bowl with a fork. Layout some avocado on the outside of each piece of bread. Unite the sandwiches by delicately arranging the vegetables on the bread. Get as many veggies on as you can because the sandwiches go down when using the panini press.

o    1/4 cup flour, like garbanzo flour
o    1/2 cup milk
o    1 cup breadcrumbs

How to make:
o    Preheat oven to 420 F.
o    Oil a baking sheet and set it separately.
o    Mix the garlic, flour, and salt in an empty dish.
o    Add the milk to a separate open container.
o    Cover each avocado slice in flour, then dip in the milk.
o    Splash breadcrumbs over each piece, pressing down lightly till the crumbs stick.
o    Place on the baking tray and bake 15-18 minutes, or golden.

5.    Avocado Chicken Salad
Ingredients:
o    2 1/2 chicken, cut up/chopped
o    1 avocado, peeled and mashed
o    1 tablespoon cayenne pepper
o    juice from 1/2 lime
o    1 tablespoon red wine vinegar
o    1/3 c red onion, chopped
o    1 packed palm cilantro, cut up
o    1 tablespoon cayenne pepper
o    pepper
o    salt

How to make:
o    In a bowl, mash an avocado.
o    Then add the lime, red onion, red wine vinegar, salt, cayenne pepper, and pepper. Blend this into the avocado.
o    Add the chicken to this compound and fold in along with the cilantro. Taste and balance the seasonings as you feel necessary.
