She gathered 24 participants. They had to have a well-controlled form of type 2 diabetes. For 12 weeks, they received a baked potato with a skin of about 100 grams. It contained about 20 grams of carbohydrates.
It served as a snack or side dish.
The control group received a daily serving of rice with the same calories and carbohydrates.
