
#meatlessmonday THE BAKED RECIPE OF THE VEGETABLE CAKE
I recently asked on my Facebook page what I would like to cook. The ideas were diverse. But a “cookbook" on the channel suggested that I would prepare another way to make vegetables for her daughters. So I went to work and recorded this Baked Veggie Pie. The video, you have it as always at the end of this article. Preparing this vegetable cake is simple, with not many ingredients. And you can adjust the vegetables to your taste or season of the year. A very rich version is the following:
INGREDIENTS:
5 eggs
1/2 onion
250 ml cooking cream (whipped cream)
1 red bell pepper
2 carrots
150 g of peas
150 g of green beans
Salt and pepper
oil
HOW TO MAKE A VEGETABLE CAKE IN THE OVEN:
1. - Boil the peas and green beans. To do this, we boil a lot of water in a saucepan and add a pinch of salt. When it boils, add both ingredients and cook for 10 minutes. Over time, we let them walk out of the water and let them rest
2.- Meanwhile, we put a dash of oil on low heat. We first add the diced carrot. Add a pinch of salt and cook for 5 minutes, stirring with a wooden spoon
3.- Over time, we also add the onion and red pepper into cubes. We add this vegetable later because the carrot is much tougher. Season and cook for another 10 minutes, stirring occasionally.
4.- All this done, we put the eggs in a bowl. We add the part of salt and pepper and beat. Then we add the cream for cooking and mix with the eggs. Once this is done, we add all the vegetables, which do not get too hot, so that the egg does not curdle and we mix again.
5.- We put this mixture in a form. One with which you make your cakes is enough. If the silicone is better. If it is metallic, it is also worth it, but do not forget to lubricate it with oil so that it does not stick later
6.- Finally, we put in the oven heated to 160ºC in advance. Cook here for about 45 minutes, until you can put a knife in it and come out clean
A very easily baked vegetable pie. When it is ready, do not forget to let it rest for at least 10 minutes before eating. And do not forget that you can adjust the vegetables to your liking!
