Today my girlfriend and I made a delicious batch of 'Alfajores', as it's said in spanish. The dough is basically butter and sugar creamed and then mixed with cornstarch and flour, so you can sort of imagine just how light and tasty these were. During these harsh times, finding time to make something beautiful with people you love really makes all of this so the more bearable.
The recipe is as follows. 180 grams of butter are creamed with 100 grams of sugar, and 2 teaspoons of vanilla extract. Then we add 3 eggs and keep creaming. When it's incorporated we add 400 grams of cornstarch and 100 grams of flour, 2 tablespoons of baking powder and the zest of a lemon. We fold it together until we get a really sticky dough that sort of resembles warm, creamy mashed potatoes. Like a paste. The we form a disk and wrap it in plastic to let it refrigerate for 2 or 3 hours. Then when it's ready you thin it out with a rolling pin (¼ of an inch should be enough) and use a small cookie cutter (maybe with a diameter of 1 inch) to make little rounds. Bake these in a preheated at 180 degrees celsius with like an inch of space in between one another (these bad boys really get fluffy) and then... You're set! You can make little sandwich cookies with Bavarian cream, peanut butter, jelly, be creative! The dough is so light and fluffy it just dissolves in your mouth with the flavours of butter and caramel with the scent of vanilla. Totally recommend.
