Vegetable omelette
It was so good, I thought I'd take a picture and share it. So half of the plate had already been eaten.
I'm not a fan of avocado either, but here you can't taste it and enjoy the benefits of the avocado.
Needed:
- 2 eggs
- half a bell pepper
- 1 onion
- 1 clove of garlic
- 2 mushrooms
- bell. roasted kernels
- handful of spinach
- a quarter of avocado
- 75-100 grams of boiled or baked chicken
Cut the vegetables finely and wok them in a pan with oil/ghee and butter. Whisk the eggs and add some salt and spices of your choice. When the vegetables are soft, add the egg mixture. Wait for the top to dry and turn the omelette over.
Place the omelette on a plate and spread the avocado and seeds on top.
