The Netherlands is toil under a
#heatwave . Cooking is not really a favorite occupation. However, it is important to get enough nutrients. Because of the heat you sweat a lot and then there may be a shortage of salts, minerals and spore elements. You can notice that on a hot day by headaches, a slight feeling in your head, getting a little shaky, seeing black spots, turning twisting.
In this blog a number of tasty and easy recipes with carrot or carrot.
Hutspot
Always when I've been away for a day or had a very busy day I cook easy. For me, that stew is. Kilo of potatoes and a kilo of carrots and onions. For a more spicy taste, I always cook a red pepper.
For lovers, you can eat a vegetarian burger or falafel balls. If you like cheese more, then cut some cubes of cheese that you put on your plate and then over it your stew.
Sometimes I make some vegetarian gravy out of vetara.
And if I want to be really luxurious I put a couple of spoons of boursin over it, it melts so well in the stamping.
What I also like is making a mixture that I hang in a bowl above the stew pan. During cooking, this becomes hot. I often put slices of tomato, mushroom, and olives in it, it also serves as gravy. Delicious (also with endive mash)
Hot or cold salad
One of my favorites is a salad of boiled potatoes, with green beans and pasta with green pesto. It's a recipe from Linda Mcartney's vegetarian cookbook. Meanwhile, I have made this recipe in many ways. Replacing the peas with carrots is also very tasty. And you can easily make the pesto yourself, but at tropical temperatures there is also plenty of choice of jars.
Peel the potatoes and cut into bite-sized chunks, cook until cooked but not too cooked, they should remain firm.
Boil the vegetables and pasta, also this is cooked but not overcooked.
Put everything together and mix it with the pesto.
For the pesto;
I pick a few hands full of ground leaf, I prefer to use the fresh young light green leaves. Grate some parmesan cheese and throw a handful of walnuts in. Put it in the food processor and grind it with sunflower oil or olive oil available.
