There is nothing like trying traditional recipes in their place of origin, especially if they are from another country. That is why I bring you today this incredible recipe of traditional French cuisine.

Ingredients for the Cassoulet:

500 g of beans.
1 chicken carcass.
Pig bones.
1 onion.
2 carrots
1 Leek.
3 garlic cloves.
Salt.
Pepper.
1 sprig of thyme.
1 bay leaf.
2 confit duck thighs.
500 g of fresh Toulouse type sausage.
1 pork knuckle.
250 g of bacon.
200 g of bacon.

Advice:

When preparing this recipe, we must bear in mind that we have to put the beans in water the night before and the meats in cold water brine with a little white vinegar.

Steps to follow:

The first thing we have to do is cook 500 g of beans in a pot with cold water until they start to boil and remove them.

Next, we prepare the broth with a chicken carcass, pork bones, an onion, two carrots, a leek, salt and pepper. Add a sprig of thyme and a bay leaf. Let it cook for 30 minutes.

Add the beans and cook for 45 more minutes.

Meanwhile, we prepare the meats. To do this, heat 2 confit duck thighs in a large pan. We withdraw.

Sauté 500 g of fresh Toulouse-type sausage in the same pan and reserve it.

We also sauté a pork knuckle, 250 g of bacon and 200 g of bacon. We booked.

When the beans are cooked, remove them from the broth and reserve the broth in the casserole.

In a large clay pot, we assemble our plate. We first put the bacon slices in the bottom, add a third of the beans, arrange the rest of the meats and cover with all the beans. The sausages should protrude slightly from the beans.

Pour the filtered broth and put the casserole in the oven at 150ºC for 35 minutes. The cassoulet must be presented with a brown crust once finished.

After the baking time, we remove.

We serve very hot.
