Eggplant can be prepared in many ways and due to its shape, it is perfect for filling with other ingredients, in this case with quinoa, vegetables and mushrooms. A delicious and very healthy vegetarian option.
To prepare a rich Quinoa we must;
Before cooking the quinoa we have to rinse it very well under the tap under running water to eliminate the saponin, which gives it a bitter taste.
We put the quinoa in a large colander and rinse it several times, stirring with your hand, until the water runs clear.
We put in a saucepan the flush cup of quinoa, and with the same cup we put the water or a vegetable broth (it will give more flavor to the recipe), 2 cups, always filling it flush. Almost as if it were rice.
We heat and when it breaks to a boil, cover and cook over medium heat for 15-16 minutes.
Don't go too long because it will be pasty and we don't want to mess it up. Remember that it will then go through the oven for a few minutes.
And then for the rich filling;
Chop the onion, garlic, peppers, tomatoes and eggplant pulp.
We clean the mushrooms and chop them into slices. In a frying pan with extra virgin olive oil, fry the onion and garlic first.
Then we add the tomato, the eggplant and finally the mushrooms. We pepper to taste.
With the prepared sofrito, add the quinoa and stir. We tried the point of salt and if necessary we salt and pepper.
Preheat the oven for 5 minutes to 200ΒΊ C. Made the filling with quinoa, we fill the halves of the eggplants and place them in a baking dish.
Add a generous layer of grated cheese on top of the filling, special for gratinating.
If there is any liquid left, we drain it, and we remove the grains with a fork to separate them. We reserve.
