Here's a super tasty frittata with broccoli and goat cheese. Easy as breakfast, lunch or a snack in between. This recipe contains only 3.2 carbohydrates per person.
Ingredients 4 people
- 1 shrub broccoli
- 10 eggs
- 60 ml whipped cream
- 4 spring outings
- 20 grams of shallot
- 100 grams of sweet pepper
- 150 grams of soft goat cheese
- 100 grams of thinly sliced bacon
- 2 tablespoons of fresh parsley finely chopped
- pepper and salt
- 1 tablespoon Provencal herbs
- coconut oil
Preheat the oven to 200 degrees.
Wash your sweet pepper and cut it into cubes, make the broccoli into small florets and boil it briefly in some salt water. Cut the onions and spring onion into rings. Beat the eggs with whipped cream and spices.
Cover a baking tray with parchment paper and spread all vegetables over the bottom. Pour your egg mixture over it and spread the soft goat cheese into tubs over the whole. Put the thin bacon slices over the frittata and put the baking dish in the middle of the oven.
Bake it off in the oven in about 55 minutes.
You can put all kinds of vegetables through this and make each time a different kind of frittata. Alternate the cheese varieties or put ham or chicken cubes through them.
