Vegetarian Spinach Curry; low carb and delicious for kids

One of my favourite vegetarian dishes and also low carbohydrate (and 100% plant-based) is this spinach curry. Children also like it in general.!

Instead of meat, we use tempeh. Tempeh contains iron and vitamin B1. At most supermarkets, you'll find tempeh among the vegetarian products.

Ingredients

  • 1 tablespoon olive oil

  • 1 tablespoon Patak's Indian Herbal Paste Madras

  • 40 grams cashew nuts

  • 1 tablespoon red wine vinegar

  • 400 grams spinach

  • 250 grams tempeh

  • 2 onions

        How to make it?

        1. Chop the cashew nuts into pieces

        2. Chop the onion

        3. Put the olive oil in a large wok along with the spice paste and put it on the fire

        4. Add the onion and fry it glassy.

        5. Add a little water to prevent the mass from burning

        6. Cut the tempeh into small slices and add it to the onion

        7. Stir fry for a few minutes and add some red wine vinegar

        8. Add spinach in parts

        9. Remove the pan from heat as soon as the spinach starts to dwindle well

        10. Spread the quick spinach curry over the plates and garnish it with the cashew nut bits

        11. Ready is the fast spinach curry
