Classic Israeli Salad


This salad is a delicious Jewish recipe, scented and a simple mix of vegetables. Special to accompany meat or chicken, I'm sure you'll love it.


5 large ripe but firm tomatoes
3 medium cucumbers with peel (without seeds)
1 medium onion finely chopped into cubes
1 cup parsley, finely chopped
3 tablespoons mint or yerba buena (only finely chopped leaves)

For dressing:

3 to 4 tablespoons extra virgin olive oil
3 to 4 tablespoons freshly squeezed lemon juice
Salt and pepper to taste

Wash all vegetables, parsley and mint .
Cut with a sharp knife, tomatoes and cucumbers into small cubes, we also chop the onion and parsley and mint as finely as possible, put all the ingredients in a salad bowl and mix .
Garnish with olive oil, freshly squeezed lemon juice salt and pepper and mix again .
Serve cold or at room temperature .
