Recipe: Luxury & Healthy Snacks

Groups of fresh raspberries and blueberries with crunchy pecans and flax seeds wrapped in rich, dark chocolate — tasty! Not only tasty, but also packed with healthy substances such as antioxidants, vitamins and minerals. Need a better excuse to make something delicious you can share with your friends?!

👉 Antioxidants are the supersubstances that neutralize harmful free radicals, thus protecting the cells in our body. 
This quick and simple recipe combines only 5 ingredients well known for their high antioxidant content:


Blueberries
Blueberries are a rich source of antioxidant anthocyanin — which gives blueberries their beautiful dark blue pigment — and other antioxidant phenolic compounds, plus a range of vitamins and minerals. The best source of anthocyanin is the blueberry — the Northern European wild blueberry — so try to find it when the season is right! Frozen berries are as nutritious as fresh berries. 

Raspberries
Delicious sweet raspberries are also rich in antyhocyanin, as well as a multitude of other antioxidant compounds, vitamins and minerals. For the highest antioxidant content, choose organic fruit whenever possible. Here too, frozen fruits are just as healthy as fresh!

Pecans
Rich, buttery pecans are packed with antioxidants, and even have the highest antioxidant content of all nuts. They are also rich in vitamins, minerals and healthy monounsaturated fat. The downside is that pecans also contain quite a lot of calories, so enjoy in moderation! 

linseed
Small flax seeds are absolutely part of the superfood! It is not only rich in antioxidants, but also contains omega 3 fatty acids and is a great source of dietary fiber. 

Dark chocolate
Dark chocolate of good quality (70% +) has a high flavonol content and contains antioxidant flavonoid, which is unique to cocoa. Although dark chocolate is relatively healthy compared to milk chocolate, it does contain some saturated fat, so stay modest.


“Healthy” Berry Choco nut Rocks
(Approximately 12)
Ingredients:
125 g fresh blueberries
125 g fresh raspberries
150 g dark chocolate (70%)
50 g chopped pecans
60 g flax seeds
 
I chose fresh berries instead of frozen in this case, because for this recipe it gives the best result. 

Calories (per stuk): calories: 135 kCal/protein: 2.6 g/fat: 9.7 g (saturated 3.2 g)/carbohydrate 8.1 g (sugars 4 g, fiber 2.5 g).

This is how you make it:
1. Put (muffin) molds on a baking sheet.
2. Melt the chocolate au bain marie. When it is completely melted, remove the bowl from the pan and continue to stir for a few minutes, to let it cool down slightly.
3. Gently spatula the rest of the ingredients through the melted chocolate, until everything is evenly covered.
4. Spoon a dessert spoon of the mixture into each mold, and leave to stir for a few hours in the refrigerator.
5. Remove from the refrigerator about an hour before serving to bring the chocolate to room temperature, for optimal glory!
