Green asparagus with smoked salmon and a poached egg...

Green asparagus... I like them very much and I like to process them in a dish...

Today I use them in combination with salmon and egg...

What do you need for this?

Brown bread.. 2 slices

Asparagus.. half a bowl

Smoked salmon.. 2 slices

A Egg

Water/salt/vinegar

Coarse sea salt/pepper/butter

Ice cubes

How do you proceed?

Cut the woody back of the asparagus...

Bring water with a little salt to a boil...

Blanch your asparagus in this by cooking them until tender...

When they are cooked, remove them from the cooking liquid and place them in a bowl of water with ice cubes so that the cooking process stops and they retain their beautiful green color... (=Blanching)

Then drain them well into a sieve or colander...

Meanwhile, put a cooking pot with water on the fire to which you added 1/2 tablespoon of salt and 1 tablespoon of vinegar per liter of water... (to poach your egg so 1l water is more than enough)

Spread the slices of bread with the smoked salmon...

Fry your asparagus in some butter and sprinkle them with a little bit of coarse sea salt...

Arrange the asparagus on top of the smoked salmon...

Then poach your egg into the net not boiling salty vinegar water...
