With this egg you instantly conjure up the atmosphere of a luxurious hotel breakfast on your table. The perfect scrambled eggs... not too dry, but solidified enough. Not that hard at all, so if you know how to do it...
What do you need?
2 eggs per person
A dash of cream
A knob of butter
A high pan and a spatula are also important
Season the eggs with pepper, salt and a little nutmeg to your taste.
Then mix them well.
Melt the knob of butter in the pan.
Keep your spatula, the cream and the beaten egg at your fingertips.
When the butter is completely melted, pour the beaten egg into the pan...
Begin to stir immediately with the spatula, making sure that the egg does not stick to the sides.
Turn down the heat and allow the egg to solidify gently while stirring.
When the egg is completely solidified, remove the pan from the heat and immediately pour in a small dash of cream to stop the solidification process.
Stir and slide on the board.
The egg should still be a little creamy, it should not be too dry.
Serve with a freshly baked bun and eat it right away.
