Recipe tip from Mrs. Dot... Zucchini soup...

One of my favorite soups is zucchini soup, very easy to prepare and depending on the spices also a lot of possibilities in terms of taste.

What do you need?

About 500 g of soup vegetables (leeks, celery, carrot and onion) coarsely cut.
4 zucchini
2 broth cubes (vegetable broth)
Water
olive oil
Look (4 cloves peeled and coarsely cut)
Provencal herbs (or self-chosen herbs)
Pepper and salt
Tabasco

Method:

Put the oil in the jar and add all the soup vegetables, zucchini pieces, garlic and stock cubes.
Stew the whole well.
Periodically stirring to avoid burning.

When the vegetables begin to become soft and their fragrances and flavourings begin to be released, add the Provencal herbs.
All mix well among themselves and add water until the vegetables are just below.

Put a lid on the pan and bring to a boil.
Let the whole boil well for a while.

Remove the pan from the heat and mix it with the blender, if you notice that the soup is too thick, add a little more water.

Sample and season with pepper, salt and possibly tabasco.

Serve with a little spices for decoration.
Very tasty with this is a piece of brie and a thick fresh sandwich.
