Koolhydraatarme ovenschotel met kip


Altijd handig, een ovenschotel. Die kan je vooraf klaarmaken en in de oven schuiven wanneer je wil.
Deze koolhydraatarme ovenschotel vraagt trouwens weinig voorbereiding. En zo heb ik het graag !

Nodig (voor een grote schotel - 4-tal volwassen personen) :

-  een bakje champignons, in reepjes gesneden.
-  een grote, rode ui (of 2 kleintjes), in reepjes gesneden.
-  een bakje ongezouten spekreepjes.
-  500 g kipfilet, in stukjes gesneden.
-  geraspte mozarella
-  olijfolie 

-  Verdeel wat olijfolie over de bodem van een ruime ovenschotel.

-  Vul de bodem met een dikke laag champignonreepjes met rode ui - reepjes. 

-  Roer even om zodat de olie wat verdeeld wordt.

-  Voeg nu de spekreepjes toe en roer opnieuw om.

(Alles rauw, niks voorgebakken.)

-  Schik hierover de stukjes rauwe kip.

-  Bestrooi met geraspte mozarella.

-  Zet in de voorverwarmde oven (180°C) tot de mozarella goudgeel kleurt en de kip gaar is. Dit duurt ongeveer 20 - 30 minuten.
