2 tomatoes
½ red onion
½ paprika
1 tbsp pine nuts
Fresh parsley
Red wine vinegar
Extra virgin olive oil

Method of preparation

1. Roast the pine nuts and grill the bell pepper until it has black blisters all around. Remove the pepper from its peel and cut the grilled pepper into small cubes.
2. Cut the tomatoes into slices, cut the onion into rings and chop the parsley finely.
3. Take a plate and place the tomato slices on it first. Then spread the onion rings on top and sprinkle the paprika cubes over it. Lastly, sprinkle the parsley over the salad and sprinkle with the red wine vinegar, pepper and salt.
