Deze jam is lekker pittig en past bij verschillende hartige gerechten. Ik doe soms een beetje op een broodje ei (gekookt of gebakken), maar het pas ook prima bij een stukje vlees, vis of een vegaburger.


Ingrediënten

5 rijpe middelgrote mango's

1 verse limoen, uitgeperst

1 spaanse peper, fijngehakt


Materialen

Een grote wijde kookpan, een snijplank, een plastic pollepel of spatel, een scherp mesje, een grote tang of lepel,een groot bord,5 á 6 kleine  glazen potjes met deksel, een ovenschaal, twee ovenhandschoenen, een schone theedoek

Voorbereiden

Snijd de 2 helften van de mango's langs de pit af. Van het gedeelte dat dan nog om de pit heen zit hoef je alleen maar de schil te verwijderen. Doe het vruchtvlees met pit en al in de pan. Schil de mangohelften en snijd de helften in kleine blokjes en doe de blokjes bij pitten in de pan. Voeg het sap van de limoen toe en de fijngehakte Spaanse peper.

Spoel de glazen potten en deksels af met heet water. Zet ze ondersteboven (dus de opening naar beneden) in de ovenschaal. Zet de schaal met de potten in de koude oven. Zet de oven op 140 °C en laat de potten in 60 minuten steriliseren.

Ondertussen laat je het fruit zachtjes pruttelen en roer je het af en toe door met de pollepel/spatel. Halverwege het kookproces (ongeveer 40 á 45 minuten) kun je de mangopitten uit de jam vissen (pas op, HEET!)en eerst laten afkoelen op een bord. Je kunt eventueel de rest van het gaar gekookte vruchtvlees nu wegschrappen met de zijkant van een lepel en weer bij de rest van mangojam voegen. Afhankelijk van de rijpheid zal je jam binnen een uurtje klaar zijn.


Bereiden


Haal de ovenschaal met de potten uit de oven (gebruik de ovenhandschoenen!). Proef of je de jam zoet genoeg vindt, eerst goed blazen ;), voeg indien gewenst een paar steviazoetjes toe voor extra zoetheid Verdeel de jam (PAS OP zowel de potten als de jam zijn heet!!!) over de 5 (6) potten en gebruik de handschoenen als je de deksels op de potten draait. Zet de potten ondersteboven op de schone theedoek. Hierdoor zuigen de potten vacuüm en kun je de jam/compote minstens een jaar bewaren.


Door het inkoken verdampt een gedeelte van het vocht en houd je ong. 1400 gram jam over.

Tips : Je kunt natuurlijk ook allerlei andere tropische vruchten hiervoor gebruiken. Zoals ananas of sinaasappel. Maak gebruik van het seizoen, aanbiedingen, of als je zoals ik dichtbij de markt woont, ga dan eens aan het einde van dag kijken. Sommige marktkooplui bieden hun waar aan het einde van de dag voor een prikkie aan...

Gebruik voor deze jam kleinere potjes om het in bewaren. Zodra een potje open wordt gemaakt en er zuurstof bij komt treed na een week of 2 wat verkleuring op. Qua smaak veranderd er niets, maar het oog wil ook wat hé ;)
