Roasted vegetables from the oven


Eating vegetables is enjoying!

Roasted #groenten from the #oven I love it and especially with the warmer weather I also like it with a good glass of wine and just sit on the table outside.

I often take the following types of vegetables: sweet potato, zucchini, sweet pointed pepper and red onion. Those colors and flavors together is really a party!

What do you need for 4 people:

4 sweet potatoes
2 courgettes
3 sweet pointed peppers
2 a 3 red onions
olive oil

italian herbs
salt
pepper

Preparation:

Wash the vegetables and cut the vegetables into several pieces.

A cozy mix of vegetables.

Mix the vegetables with a couple of spoons of olive oil, Italian herbs and some salt and pepper.

Slide the baking sheet with parchment paper and the vegetable mixture into the middle of the preheated electric oven to 220 degrees and roast the vegetables between 15 to 20 minutes.

Serve them in a dish on the table! Nice to see those colors!

At the table! Serve the roasted vegetables with a nice tender steak and a mixed salad with cucumber.
