How to Use Coriander
Coriander is a versatile herb that can be used in various ways:
- Fresh and finely chopped coriander leaves go great in salads, salsa sauces and soups. They give a fresh taste.
- Coriander powder is mainly used for flavoring curries, stews and marinades.
- Coriander leaves can also be used in healthy drinks.
- Combine coriander leaves with spinach, mint leaves, and lemon juice
- Use coriander leaves as a garnish for your dishes.
Recipes with Coriander
Coriander hummus
Ingredients for four people: 20 grams of fresh coriander, 400 grams of chickpeas, a clove of garlic, three tablespoons of sesame oil, a lemon
Preparation
- Drain the chickpeas, but collect 3 tbsp of the liquid.
- Set aside a tablespoon of chickpeas.
- Grate the yellow rind of the lemon and squeeze half a lemon.
- Chop the garlic finely.
- Set aside eight coriander leaves and cut the rest roughly.
- Put the drained chickpeas with the collected liquid, lemon zest and lemon juice, garlic, coarsely chopped coriander and two tablespoons of sesame oil in your blender and puree until smooth, smooth.
- Season with salt and pepper.
- Spoon into a bowl.
- Garnish with the reserved chickpeas and coriander and drizzle with the rest of the oil.
- Is your hummus too dry? Just before serving, add a tablespoon of water and stir thoroughly.
- Delicious with raw vegetables and pita bread sticks.
Chicken meatballs with coriander
Ingredients for ten people: 500 grams of minced chicken or veal, 20 grams of fresh coriander, 70 grams of couscous, one egg, one teaspoon of paprika powder, one and a half teaspoons of coriander powder, three tablespoons of olive oil
Preparation:
- Put the couscous in a bowl and add four tablespoons of cold water.
- Leave for five minutes.
- Cut the fresh coriander roughly.
- Add the ground beef, egg, paprika powder, ground coriander and half of the fresh coriander to the couscous.
- Season with salt and pepper and knead the mixture for two minutes.
- Shape into 10 balls with damp hands.
- Heat the oil in a pan and fry the meatballs until tender (six minutes).
- Sprinkle with the rest of the fresh coriander.
- Serve hot or cold.
- Delicious and healthy with a dip of three tablespoons of Greek yogurt, 1 tablespoon of mayonnaise and a finely chopped clove of garlic.
