Healthy cheesecake
Ingredients (10 people):
• 750 gr low-fat cottage cheese
• 250 gr strawberries
• 8 gelatin leaves
• 1 vanilla pod
• 5 tbsp honey
• Blueberries for garnish
• 130 gr date (pitted)
• 40 gr coconut oil (melted)
• 40 gr walnuts
• 75 gr oatmeal
• Food processor
• Springform
• Baking paper
Preparation:
• Put all the ingredients for the bottom (dates, walnuts, oatmeal and coconut oil) in a food processor and grind. Line the bottom of the springform form with parchment paper. Spread the mixture over the bottom and press well with a spoon. Put the springform in the fridge for as long as.
• Grind or mash approx. 200 gr strawberries. Put the strawberry puree in a pan and heat it up. Soak the gelatin in cold water and squeeze out and stir in the strawberry puree. Allow the mixture to cool slightly.
• Place the cottage cheese in a bowl and stir in the mashed strawberries. Scrape the marrow from the vanilla pod and stir in the cottage cheese together with the honey. Pour the mixture over the bottom and let it set well in the refrigerator for at least 4 hours. Garnish the cake with the remaining strawberries and blueberries.
