This pre-wash is done under the tap with cold water for a few minutes. The seeds should be rubbed gently and then drained. With this wash we remove the layer of saponins that cover the seeds.
Saponins are molecules with soap-like properties, hence their name, that form a foam when shaken in water. This foam is what we remove when washing and draining the quinoa. Saponins, in addition to giving quinoa a bitter taste, are toxic and could interfere with its assimilation by the digestive system.
It cannot be cooked in its natural state because it has a component, called “saponin” that other foods such as cassava and other legumes have and which is used to make soaps, put out fires or produce certain medicines, whose consumption, in very high quantities, can be very toxic.
rubbing well with your hands to remove that substance. You will see how a foam forms that after washing, it will be removed. Don't let the quinoa soak because that way, it keeps sticking to the grains
