At suitable refrigeration and freezing temperature, bacteria stop multiplying and the decomposition process is delayed. The most advisable thing is to freeze the fish at a temperature of 0 to -5º C since it can last up to 6 months frozen if it is lean, from 2 to 3 if it is fatty and from 4 to 6 if it is already cooked.
The storage time varies depending on the type of fish it is, so it is recommended to do it like this:
-Lean fish: In the freezer, they last between 6 and 8 months, while in the refrigerator they keep a maximum of 2 days.
-Oily fish: They can last 1 or 2 days in the refrigerator and in the freezer for 2 to 3 months.
-Shrimp, oysters, squid, and lobsters: In the refrigerator, they last approximately 2 days and in the freezer from 3 to 6 months.
-Cooked fish: This food can be kept in the refrigerator for 3 to 4 days, as long as it is in an airtight container. And in the freezer, it can last up to 6 months.
-Smoked fish: Due to its smoked condition, this fish can be kept for 14 days in the refrigerator, but only 2 months in the freezer.
-Canned: Canned fish such as tuna and sardines are best kept in the pantry, depending on their date of manufacture they can last up to 5 years. But, if you open them and want to refrigerate them, it is important to remove them from the can and reserve them in a container with a lid. This is the only way to keep them in the refrigerator for 3 or 4 days and in the freezer for up to 2 months.
-Oysters, mussels, and clams in the shell: Do not freeze. If they are alive, it is best to keep them in a ventilated container.
How Long Does Food Last in The Fridge and Freezer?
Keep in mind that sudden changes in temperature can spoil the eggs and make them last a short time. Let's see how long good eggs last in the refrigerator.
-Fresh with shell: In the refrigerator, they can be kept between 3 and 5 weeks. They should not be frozen.
-Raw yolks and whites: Eggs are sometimes removed from the shell to make some dishes. Thus they can remain in the refrigerator for 2 to 4 days, as long as they are stored hermetically. And in the freezer, they would last about 1 year.
-Cooked: In the refrigerator, they can last 1 week. They should not be frozen because they can change their texture and flavor.
-Pasteurized: These egg-based products can be kept in the refrigerator for 3 days, if they are opened, they will last 10 days if they are closed. And they can only be frozen if they are closed.
In order for the cooked food that we prepare for the rest of the week to be preserved, you must refrigerate it correctly. Do it like this!
-Salads: These should preferably be eaten fresh, but if you have to refrigerate them, use airtight containers. In the fridge, they can last 3 to 5 days. They should not be frozen because they break down and lose nutrients.
-Soups and stews: They are usually vegetables and meats, and to be preserved they must be in a well-closed container. They last in the refrigerator for 3 to 4 days, and in the freezer for up to 3 months.
-Prepared dishes: Other foods already cooked and ready to reserve last 2 to 4 days in the refrigerator; while in the refrigerator they can be kept for up to 4 months.
Fruits and Vegetables
Most fruits and vegetables are usually kept out of the fridge, so there is no need to refrigerate them unless you intend to extend their shelf life by a certain date. In the case of fruits, the cold usually accelerates their ripening, this happens with bananas, avocados, strawberries, blackberries, and other red fruits, which can last a maximum of 3 days. They should preferably be eaten fresh, although if you decide to freeze, keep in mind that they can undergo an oxidation process if they are more than a month old.
Other fruits such as apples, papaya, grapes, mango melon, pineapple, watermelon, lemons, and oranges can stay in the refrigerator for 5 to 7 days. Similarly, in the refrigerator, they can rust after a month.
As for vegetables, these are usually kept for much longer, since they do not decompose as quickly as fruit. Potato, celery, and carrot can stay fresh for two weeks. While the pumpkin, tomato, broccoli, spinach, up to two weeks. Lettuce can be damaged in less than 5 days.
To prolong the shelf life of these vegetables you can put them in the fridge. It is recommended to wash, peel, chop and store them in hermetically sealed bags so that they last at least two months without rusting.
-Fresh milk: This dairy can last 1 or 2 days in the refrigerator when it is open if it remains closed for up to 4 days. Although it is not recommended to freeze it, in the freezer it would last up to 3 months.
-Mayonnaise: If kept in its original container it can last 1 to 2 months in the fridge and should not be frozen.
-Butter: Lasts 3 to 4 weeks in the fridge and up to 8 months in the freezer. For this, it must remain in its original container.
The most common food leftovers are chicken and meat, these are stored like this:
-Chicken leftovers: They remain in the refrigerator for 3 to 4 days and in the freezer, they last from 4 to 6 months.
-Shades of meat (beef, veal, pork): They last 2 to 4 days in the fridge. And up to 3 months in the freezer.

-Fresh and clean: Whenever you go to refrigerate or freeze food, it must be fresh and clean to prevent bad odors from accumulating in the refrigerator or freezer. In case it is cooked food, let them cool to room temperature and then store it in the refrigerator.
-Correct temperature: The conservation of food is not only due to its refrigerated or frozen time but also to the adequate temperature that both the refrigerator and the freezer must-have. It is recommended that the refrigerator be kept between 1 and 5 °C, and the freezer at -18 °C.
-Do not over manipulate them: You can favor the conservation of food by avoiding excessive handling. If you decide to refrigerate or freeze some, ideally you don't take it out of the fridge or freezer until you're ready to use it. If you only need a portion, it is better to refrigerate it this way, since removing and then placing the food in the cold can speed up its decomposition.
The refrigerator and freezer are our great allies to store and preserve food, but the key to this is that they preserve their quality and the nutrients they contain.
