How to prepare a delicious Japanese mayonnaise

First of all Japanese mayonnaise is an extremely salsa in their country of origin, the Japanese have managed to adapt many foreign recipes to their palate
and this mayonnaise was no exception.

It is delicious as this salsa goes perfectly well with many dishes, it usually uses mono-sodium glutamate to greatly enhance its flavor.

For the ingredients we will need, 2 egg yolks, 20gr of Dijon mustard or Karashi (it's Japanese mustard) if you don't have you could try American mustard,
250 ml of sunflower oil, 6g of rice vinegar (very important) 6g of yuzu juice in case you don't have you could pour lemon juice, 10gr of sugar, 50 ml
of dashi broth and a pinch of salt.

The preparation is simple, in a bowl we will place the two egg yolks next to the mustard and the pinch of salt, mix the three ingredients with the rods
and we will begin to pour sunflower oil gradually to mix, slowly. It is important not to stop stirring at any time, so that it blends perfectly
mayonnaise.

Once we have incorporated it in its entirety and the mayonnaise is already fully bound, we will proceed to add the rice vinegar and stir it with the rods, then
the juice of yuzu or lemon and we will continue to mix, then add the sugar and once it is integrated with the rest of the ingredients, add the dashi and that's it!

Only your favorite dishes are missing, along with this delicious sauce. My first experience with her was in a sushi restaurant, since that moment I have had the pleasure of having a little in the pantry.
