Lemon cheesecake.

Today I will show you an easy and delicious recipe to make lemon cheesecake.

Ingredients

  • 18 lemons approximately.
  • 290gr of cream cheese.
  • 390gr of condensed milk
  • 1/2 bar of butter.
  • Vanilla Mary Cookie.

Preparation:

The preparation will be subdivided into two parts: The base of the cheesecake and the mixture.

Cheesecake Base:
  1. Para empezar vamos a triturar un paquete de galletas de vainilla y, paralelamente, vamos a derretir 1/2 bar of butter.
  2. Having the crushed cookies, we will join them with the previously melted butter and with the juice of 2 lemons, until a kind of compact dough is formed.
  3. After having our vanilla biscuit dough, we're going to put it on a mold. (In the pictures that I will attach can be fixed in the way in which I placed the cookie dough).
  4. After having our mold prepared, we will take it to the oven for 15 minutes, over low heat. The idea is that the cookie is a little crunchy, but we can't let it burn.
  5. Then we take out our biscuit base and, after a little while cooling down, we'll notice that it will be hardening little by little.

Cheesecake Mix:
  1. First we're going to squeeze 15 lemons into a tacita.
  2. Then we will use our blender or blender and we will put our ingredients inside: Cream cheese, condensed milk and the juice of those 15 lemons.
  3. At the end of whipping we will have a thick mixture. We can try and, if you feel it very sweet, we can add more lemon juice until it is to your liking.
  4. After refrigerating for about 10 minutes our mixture, we will put it on top of the biscuit base we had previously cooked.
  5. Let's cook for about 10 minutes our mixture next to the base. We can go check. As soon as we feel the consistent mixture (keep in mind that it will always be a bit gelatinous), we can take our cheesecake out of the oven.
  6. Then we're going to refrigerate 5 to 6 hours and then we'll be ready to eat.

Personally, after waiting 5 or 6 hours of snack, I usually put it on top snowy (meringue) and grate lemon, but that's optional.

  2. Then we are going to use our mixer or blender and we are going to put our ingredients inside: Cream cheese, condensed milk and the juice of those 15 lemons.
  3. When we finish beating we will have a thick mixture. We can go testing and, if it feels very sweet, we can add more lemon juice until it is to your liking.
  4. After refrigerating our mixture for about 10 minutes, we are going to put it on top of the biscuit base that we had previously cooked.
  5. We are going to cook our mixture for about 10 minutes with the base. We can go review. As soon as we feel the consistent mixture (keep in mind that it will always be a little gelatinous), we can remove our cheesecake from the oven.
  6. Then we will be refrigerate for 5 to 6 hours and then we will be ready to eat.


Personally, after waiting 5 or 6 hours for a snack, I usually put snow on top (meringue) and free lemon, but that is optional.
