Wheat Flour Empanadas:
The recipe is mostly for making the dough, as they can be filled with any ingredient you want.
ingredients
2¼ cups (315 g) wheat flour or all-purpose flour
1½ teaspoon salt
1 stick (113 grams) unsalted butter, chilled and diced
1 large egg, lightly beaten
1/3 cup (80 ml) cold water or more if needed
Thin slices of cooked ham (type and quantity you want)
Grated cheese (Type and quantity you want)
Chicken stuffing
Meat stuffing
Water

Directions
In a large bowl mix the flour with the salt. Then add the butter and crumble it with your hands or a fork. This process can also be done in a food processor. Now, add the egg and water and knead until the dough is firm, but don't knead too much so that the empanadas aren't too hard. Add more water if you see that the dough is too dry. Knead for a few minutes and form the dough into a ball, wrap it with plastic wrap or plastic wrap and store it in the fridge for 30 minutes to 1 hour.
Preheat oven to 400ºF (204ºC).
Flatten the dough with a rolling pin on a floured surface until it is very thin. Cut medium circles (approx. 4-5 inches or 10-13 cm) with a large cookie cutter or cup to form empanada lids. Fill the empanadas with the filling you want, cheese, ham and cheese, chicken or meat. Moisten the edge of the dough with a little water, fold it in half and seal it with your fingers. Then form the repulgue by folding one of the corners of the pie with your thumb and squeeze. This will cause a new tip to form. Bend that tip with your thumb again and squeeze again. Continue this process until you reach the other corner of the empanada.
Spread the empanadas with the beaten egg on top and bake them for 35-40 minutes or until golden brown. Empanadas can also be fried at 350ºF (180ºC) for about 6-7 minutes or until golden brown.
