Recept: Toast met brie en champignons

Brie met champignons is een heerlijke combinatie. Deze lunch zal dan ook zeker in de smaak vallen.

Voor 2 personen

  • 2 (zuurdesem) boterhammen
  • 6 plakjes roombrie
  • klontje boter
  • 200 gr kastanje champignons in plakjes
  • 1 teentje knoflook, fijngehakt
  • 1 tl fijngehakte rozemarijn
  • 1 tl balsamico
  • versgemalen peper en zout
  • handje rucola
  • versgehakte peterselie

  1. Verwarm de grill van de oven voor.

  2. Smelt een klontje boter in een koekenpan en voeg de knoflook en champignons toe. Bak de champignons in ca 6 minuten, op middelhoog vuur.

  3. Voeg de fijngehakte rozemarijn, balsamico en wat versgemalen peper en zout toe en bak nog een minuutje mee.

  4. Rooster de boterhammen onder de grill van de oven aan beide kanten lichtbruin. (Blijf erbij staan, want dit gaat snel).

  5. Verdeel de plakjes brie over de geroosterde boterhammen en zet nog een minuutje onder de grill tot de brie een beetje gesmolten is.

  6. Verdeel de rucola en de champignons erover. 

  7. Bestrooi met wat versgehakte peterselie en versgemalen peper.

Baking the cookies is already a feast in itself, and if you bake them yourself, they are really tastier!Sarah Jegers baked these unicorns so that her daughter of 5 years could treat them to school. That was a real success, she told me. She made the dough with biscuit mix, 2 days prior to the birthday, you can keep the biscuits for a long time, in an airtight package. The day before the birthday she decorated the biscuits with the royal icing technique.The Royal Icing is made with egg white, powdered sugar, lemon juice and water. You can draw lines with it and color your cookies nicely. The basic recipe for Royal Icing can be found clearly and extensively described at: Cupcake recipesMethod of preparation:Process the ingredients at room temperature. Knead 500 g of mix, 150 g (cream) butter and 1 egg (50 g) to form a dough. Leave to stiff in the refrigerator for at least 1 hour. Preheat the oven to 180°C (convection oven 160°C). Roll out the dough on a floured worktop (up to approx. 3 mm thick). Put out the cookies and bake them in the middle of the oven for about 12 minutes until golden yellow. Allow the cookies to cool and decorate them to your liking. Suitable for approx. 25 biscuits of 7-10 cm, depending on thickness and shape.Decorating the unicorns is step by step; first the nose, the mane, the horn, the rest of the head and finally the eyes and nostrils. When the unicorns are ready, present them in a nice basket. Do you find it hard to keep your hands off before you buy a treat? Then put transparent foil around it so that no one can eat it beforehand!
