If you want to offer a delicious treat for a different day with family and friends or for the end of the year celebrations. Here is the recipe for the sweet that I prepared for Christmas Eve dinner.
Ingredients: 2 kilos of milky or green papaya, about 1 kilo of paper (molasses from sugar cane), 2 cups sugar, 1 tablespoon baking soda, 1 and 1/2 teaspoon cloves and water.
Preparation: the seeds and crust are cut into milky and cut into julienne and ideally leave them for 2 or 3 hours on a tray in the sun.
Then in a pot of water that covers them and the tablespoon of baking soda are put on the fire, once the water boils, they are allowed to cook for 2 minutes with the pot covered. They are removed from the fire, strains and washed with cold water.
In a pot with about 12 cups of water, melt the paper paper and sugar. Once it boils, add the milky and cloves and cook for about 2 hours, until the syrup starts to take consistency but does not become thick. Milky should be translucent.
