Mardi Gras has always been an exciting time of the year in New Orleans. The official start of the Mardi Gras season is marked by Epiphany, January 6 and ends with Fat on Tuesday, the day before Ash Wednesday, the start of the loan. New Orleans gumbo is almost identical to Mardi Gras. There are probably as many gumbo recipes as there are chefs and families often guard their gumbo secrets carefully. It would be considered a disgrace if you could ask a chef about its recipe.

New Orleans gumbo, cooked with a mixture of French, Caribbean, African and Native American ingredients, is a variant of the European French bouillabaisse. The traditional ingredients of the French cuisine, which are not found in the New World, were replaced with ingredients of the same origin. Look again, a new type of Culinary was born.

On a trip to New Orleans during Mardi Gras, many years ago, I had the good fortune to taste a few dishes of this incomparable soup. My palate was fascinated by this unique blend, so much so that I spent several years tracking every gumbo recipe I could find, with many experiments that were not even close to the hobby of that particular flavor. Even the most luxurious restaurants have failed to deliver what I once knew was a nightmare. After much deliberation and myriads of secrecy, I finally succeeded. New Orleans gumbo is a small piece of cooking heaven that I would like to share with you.
