Omelette with vegetables and kidney beans
An easy recipe for Saturday or meatless monday. Or just on a busy Wednesday afternoon when the kids aren't in school. But this is also a great recipe for the flexitarian, for the variation. Egg, with vegetables and legumes. Leave out the legumes and you will have a low-carbohydrate dish.
To give the omelette a little more spice I put a lot of black pepper through, fresh parsley finely chopped. And the chilimix of Euroma. A pinch, no more.
I left the vegetables a little coarse. After all, chewing is good for digestion and brain.
