
**Ingredients: **
- 4 medium potatoes
- 200 gram chicken breast, cut into small cubes
- 100 grams of chestnut mushrooms, diced
- 200 ml cream, divided (100 ml for the chicken-mushroom mixture and 100 ml for the mashed potatoes)
- 100 grams of shredded cheddar cheese
- 50 grams of butter
- Salt and pepper to taste
- 2 red chilli peppers, thinly sliced
- 2 tbsp chives, finely chopped
- 2 tbsp olive oil
- 1 clove of garlic, finely chopped
**Preparation method: **
1. **Prepare potatoes: **
- Preheat the oven to 200°C.
- Prick the potatoes all around with a fork and place them on a baking tray. Bake the potatoes for about 45-60 minutes, or until they are soft when pierced with a fork.
- Take the potatoes out of the oven and let them cool slightly.
2. **Prepare chicken and mushrooms: **
- Heat the olive oil in a skillet over medium heat.
- Add the chicken cubes and fry them until golden brown and cooked. Add salt and pepper to taste.
- Add the cubes of chestnut mushrooms and fry them until they are soft and golden brown.
- Add the finely chopped garlic and fry for another 1-2 minutes.
- Pour 100 ml of cream into the pan and let it simmer gently until the sauce thickens slightly.
- Stir the shredded cheddar cheese into the mixture until it melts completely and the sauce is creamy. Take the pan off the heat.
3. **Make Creamy Mashed Potatoes: **
- Cut the top of the potatoes and hollow them out carefully with a spoon, leaving a thin layer of potato in the skin.
- Put the hollowed out potato in a bowl and add the butter and 100 ml cream. Mash the whole thing into an extra creamy puree. Add more cream as needed to achieve desired consistency.
- Season the puree with salt and pepper.
4. **Fill potatoes: **
- Fill the hollowed out potatoes with the chicken-mushroom mixture first.
- Cover the chicken mixture with a generous layer of the creamy mashed potatoes.
5. **Upon completion: **
- Place the stuffed potatoes back in the oven and bake for another 10-15 minutes, until the top of the puree is light brown and crisp.
6. **Serving: **
- Remove the potatoes from the oven and garnish with red chilli slices and chopped chives.
- Serve hot and enjoy these deliciously creamy stuffed potatoes!
