Pumpkin Spice Muesli: A Warm Fall Favourite for Breakfast

Hi, I'm Evy van Evy's Cooking Arts! Today, I'm sharing a delicious warming breakfast in my granola series: Pumpkin Spice Muesli. This autumnal combination of oat flakes, pumpkin spice, pureed pumpkin and crunchy nuts brings the feeling of a cosy autumn right to your breakfast table. Ideal for starting your day full of energy and flavour!

Kitchen necessities

  • Bowl for mixing
  • Scoop
  • Measuring cups and spoons
  • Oven for roasting nuts (optional)

Ingredients

  • 50 g oat flakes
  • 1 tsp pumpkin spice (or a mix of cinnamon, nutmeg, and ginger)
  • 2 tbsp pureed pumpkin
  • Handful of chopped nuts (eg. walnuts or pecans)

Preparation method

  1. Mix the oat flakes and pumpkin spices in a bowl. Stir thoroughly so that the spices are evenly distributed over the oat flakes.
  2. Add the pureed pumpkin and mix again until the pumpkin is well incorporated.
  3. Sprinkle the chopped nuts over the granola for a nice crunch.
  4. Optional : Roast the nuts briefly in the oven for extra flavor and crunch. Let them cool down before adding them.
  5. Serve your Pumpkin Spice Muesli in a bowl. Enjoy it with milk, plant-based milk, or yogurt!
