1. The first step in making this typical Colombian recipe will be to pre-list the ingredients. Keep in mind that the beans must be in water 24 hours before preparation.

2. Process the tomato and onion and then put everything in a pressure cooker to speed up the cooking of the beans. Add some sunflower oil, salt and pepper to enhance the flavor of the beans.

3. Sauté the onion and tomato, add the sliced chorizo with a little garlic paste. If you prefer, you can also add chicken to the recipe for rancheros beans.

4Remove the water where you hydrated the beans and add them to the pressure cooker. Cover with enough water and add some thyme and bay leaf to flavor the ranch beans.
