On cold winter days, it's great to enjoy a good stew. One of my favorite stew is a sturdy bacon endive stew and I eat it with a piece of smoked sausage or a bacon. One of the main ingredients of stew is, of course, the potato. But what if you follow a low-carb diet (so you don't eat starchy products) and still want to eat a tasty stew? Then you make these without the carbohydrate-rich potatoes. Because instead of potatoes, this stew is made with cauliflower as a substitute for the potatoes. Tip: Don't you like cauliflower? Then choose celeriac.

Ingredients for 2 people:

1 large stump endive 300 grams cauliflower (possibly frozen) 50 grams grated cheese 30+ 1 tbsp hüttenkase 1 pinch of nutmeg 250 grams low-fat bacon
