Chicory... just got some stumps from someone in the neighborhood... and although I usually find chicory too bitter and you'll never see me buy it, this time I'm going to try a dish with these vegetables. A spicy soup of chicory, chickpeas, apple and curry... Delicious!

For this you will need:

3 thick stumps of chicory
1 onion
1 apple
vegetable broth
olive oil
Canned chickpeas (pre-cooked or steamed)
Look
Curry
Pepper
Tabasco

Method:
Cut the onion, the apple and the chicory into pieces. You can remove the hard bitter piece of chicory.
Put a little olive oil in the pot and stew the pieces of onion, apple and chicory until they give off their flavors well and make them soft.
Add to it the vegetable broth, the vegetables should be below.
Let the whole boil for a while.
Remove the pot from the heat for a while and mix the whole with a blender.
