Hoy les mostraré una fácil y deliciosa receta para hacer cheesecake de limón.

Ingredientes:

  • 18 limones aproximadamente.
  • 290gr de queso crema.
  • 390gr de leche condensada
  • 1/2 barra de mantequilla.
  • Galleta maría de vainilla.

Preparación:

La preparación la vamos a subdividir en dos partes: La base del cheesecake y la mezcla.

Base del cheesecake:
  1. Para empezar vamos a triturar un paquete de galletas de vainilla y, paralelamente, vamos a derretir 1/2 barra de mantequilla.
  2. Al tener las galletas trituradas, vamos a unirlas con la mantequilla previamente derretida y con el jugo de 2 limones, hasta que se forme una especie de masa compacta.
  3. Luego de tener nuestra masa de galletas de vainilla, la vamos a poner sobre un molde. (En las imágenes que voy a adjuntar pueden fijarse de la manera en la cual coloqué la masa de galletas).
  4. Luego de tener nuestro molde preparado, lo vamos a llevar al horno por 15 minutos, a fuego bajo. La idea es que la galleta quede un poco crocante, pero no podemos dejar que se queme.
  5. Luego sacamos nuestra base de galletas y, después de un ratito enfriándose, notaremos que va a ir endureciendo poco a poco.

Mezcla del cheesecake:
  1. Primero vamos a exprimir 15 limones en una tacita.
  2. Luego vamos a utilizar nuestra batidora o licuadora y vamos a poner nuestros ingredientes dentro: Queso crema, leche condensada y el jugo de esos 15 limones.
  3. Al terminar de batir vamos a tener una mezcla espesa. Podemos ir probando y, en caso de sentirla muy dulce, podemos agregar más jugo de limón hasta que quede a su gusto.
  4. Luego de refrigerar por unos 10 minutos nuestra mezcla, vamos a ponerla encima de la base de galletas que habíamos cocinado anteriormente.
  5. Vamos a cocinar por unos 10 minutos nuestra mezcla junto a la base. Podemos ir revisando. En cuanto sintamos la mezcla consistente (tener en cuenta que siempre va a quedar un poco gelatinosa), podemos sacar nuestro cheesecake del horno.
  6. Luego vamos a refrigerar de 5 a 6 horas y luego estaremos listos para comer.

Personalmente, yo después de esperar las 5 o 6 horas de refrigerio, suelo ponerle por encima nevado (merengue) y rallarle limón, pero eso es opcional.

Ingredients:

preparation:

We are going to subdivide the preparation into two parts: The base of the cheesecake and the mixture.

Cheesecake base:

  1. To start, we are going to crush a package of vanilla cookies and, in parallel, we are going to melt 1/2 stick of butter.
  2. When we have the crushed cookies, we are going to join them with the previously melted butter and the juice of 2 lemons, until a kind of compact dough is formed.
  3. After we have our vanilla cookie dough, we are going to put it on a mold. (In the images that I am going to attach you can see the way in which I placed the cookie dough).
  4. After having our mold prepared, we are going to take it to the oven for 15 minutes, over low heat. The idea is that the cookie is a little crispy, but we cannot let it burn.
  5. Then we take out our cookie base and, after cooling for a while, we will notice that it will harden little by little.

Cheesecake mix:

  1. First we are going to squeeze 15 lemons into a cup.
  2. Then we are going to use our mixer or blender and we are going to put our ingredients inside: Cream cheese, condensed milk and the juice of those 15 lemons.
  3. When we finish beating we will have a thick mixture. We can go testing and, if it feels very sweet, we can add more lemon juice until it is to your liking.
  4. After refrigerating our mixture for about 10 minutes, we are going to put it on top of the biscuit base that we had previously cooked.
  5. We are going to cook our mixture for about 10 minutes with the base. We can go reviewing. As soon as we feel the consistent mixture (keep in mind that it will always be a little gelatinous), we can remove our cheesecake from the oven.
  6. Then we will refrigerate for 5 to 6 hours and then we will be ready to eat.


Personally, after waiting 5 or 6 hours for a snack, I usually put snow on top (meringue) and grate lemon, but that is optional.
