Although Venezuela belongs to a tropical region and does not have 4 seasons, there is a wide variety of climates within the country, throughout the year: temperate, very cold and very hot. For this reason Venezuelan cuisine is very varied, as much as its culture. Each place determines its diet according to geography, tradition and climate. Andean pisco is a typical dish of the cold areas of Venezuela: The Andes. In Táchira, Merida and Trujillo, this egg soup with milk is consumed at breakfast, even at some dinners. During the Andean mornings temperatures are quite low, especially in the mountain range. For this reason people start the day with this milk soup, to keep the body heat before going out to the daily day.
The Andean pisca of Mérida (Venezuela) is an energetic and economical soup, the ingredients that make up it are: vegetable or meat broth, potatoes, milk, cheese, and coriander. The cheese used is Andean smoked cheese, which is not obtained outside the Andes region, however, any semi-hard cheese serves and will also be very rich.
The taste of this dish is characterized by its softness, delicacy and marked accent to coriander. However, as is characteristic of Venezuelan gastronomy, there are many variants of Andean pisca merideña because every home and region have its distinctive touch. Some add roasted meat in pieces, may be the leftovers of the day before, because the meat prepared thus resembles the taste of smoked cheese. Others lay egg, others don't. Some accompany this Venezuelan Andean soup with soda cookies and others with Andean arepas. That's why it is said here that... In the variety is the taste!
