One of my favourite vegetarian dishes and also low carbohydrate (and 100% plant-based) is this spinach curry. Children also like it in general.!

Instead of meat, we use tempeh. Tempeh contains iron and vitamin B1. At most supermarkets, you'll find tempeh among the vegetarian products.
