Simple recipe for preparing the famous arepa reina pepiada at home. This delicious Venezuelan arepa has a chicken filling with avocado.
The Queen Pepiada is without doubt the most famous arepa in Venezuela. It is a kind of roasted arepa that is filled with a mixture of grated chicken, mayonnaise, mashed and sliced avocado, coriander and spices.
ingredients
For the arepas:
2 cups of pre-cooked corn flour 290 g.
2 ¼ cups hot water 510 ml
1 teaspoon of salt
2 tablespoons of oil
For the chicken and avocado filling of “La Reina Pepiada":
1 grated roast chicken breast, 300 g.
2 sprigs of coriander
1 small clove of garlic
1 medium onion 80 g.
1 ripe avocado 300 g.
3 tablespoons mayonnaise
1 tablespoon of olive oil
1 tablespoon lemon
Salt to taste
Preparation
For the arepas:
Put the hot water in a mixing bowl. Then add the salt and a tablespoon of oil, stir. Add the flour, stirring constantly with a spoon. Knead until a beautiful smooth consistency, without lumps. The dough should be easy to get out of the bowl.
Divide the dough into six equally sized balls and form the arepas by flattening them between your hands. Spread the remaining tablespoon of oil over the surface of a frying pan.
Turn on the heat over medium heat and place the arepas to be cooked covered with sufficient distance from each other (for easy turning). When the first five minutes have passed, turn them over and cook them covered for another five minutes on the other side. Remove them and let them rest.
For the filling of queen pepiada:
While the arepas are cooking. Peel the avocado, store at least 25% of it to serve sliced in the arepas and mash the rest. Cut the other part of the avocado into thin slices. To prevent the avocado from turning black, you can sprinkle a few drops of lemon on it.
Finely chop the onion and coriander. Crush the clove of garlic. Put the dressings in a bowl and mix with the olive oil, lemon juice, salt and mayonnaise. Pour the mashed avocado into the bowl with the mayonnaise and stir until smooth paste.
Add the grated chicken. Mix everything with a wooden spoon. Taste and correct salt if necessary. With a sharp knife, open the arepas, remove the excess batter and fill as desired. Do not forget to leave some space to place a few slices of avocado.
