Yacon!

I had never heard of it: Yacon. But just got through the Burgerboerderij to try. Did look up some recipes but eventually chose to make something of it yourself. So yacon in the wok with grated potatoes, a red onion and minced meat.
Really: it doesn't look. It's just something you'll see lying in an alley behind the cafe late Saturday night, but it smells pretty good!
After woking, put it in the airfryer (for lack of an oven) with a little butter on it.
See the end result may be best! It looks nicer in a restaurant but I find it nonsense to put a stump of parsley or something next to it 🤪
But it certainly was good.! Even if I'll do it differently next time. Think apple could make it a little more delicious because of the net, a little more apple than Yacon or something. And have also come across recipes with sweet and sour sauce and rice. Then pineapple would be nice.
(Yacon is a tuber that you can eat raw as well. But so also bake, wok, and cook, in the salad and you also have Yacon soup. It's sweet: little intersection between apple/melon/pear like taste. Quite a lot of possibilities and well worth it.!
