All the days here are pretty much the same. That's why I always like to unpack with the food on weekends. Especially Sunday with breakfast.

Now I wanted to try something new this Sunday. I have a new muffintray that fits in my little oven so I went looking for muffins suitable for breakfast or brunch.

Among other things, I came out to 'egg muffins'. That seemed like something to me. Turn something different than the scrambled eggs or boiled egg that I usually do on Sundays.

Most recipes contained bacon. But pig I always try to avoid as much as possible and therefore I do not have in the house. I saw a variation with chicken breast, and I do have it in the house. So I've done a bit of here and a bit of there and a bit of myself. I had grated cheese left from yesterday's casserole, so that seemed to me an ideal topping. Especially since I myself never add salt to any dish.

In terms of herbs I used the pepper/garlic grinder. Salt, of course, too. I also often use Italian herbs or paprika in combination with 'egg' so that could have been great. I'm going to pass on the ingredients I used today.
