Low-carbohydrate creamy spinach soup

Low-carbohydrate creamy spinach soup

Ingredients for 1 person, or 2 small plates of low-carbohydrate creamy spinach soup:

    • 800 grams of washed fresh spinach
    • 2 shredded yellow onions
    • 1/2 smoked chicken breast, cut into small pieces myself I chose strips
    • 1/2 pack of Boursin
    • 250 ml of cooking cream
    • 4 tablespoons of ground parmesan cheese
    • 4 stock cubes, you can decide for yourself whether you choose beef/chicken/vegetable or a mixture
    • Pepper
    • Olive oil for baking
    • 2 to 3 liters of water, depends on how bound you want the soup

Preparation of low-carbohydrate creamy spinach soup

    1. Cook the chopped onions for 1 minute in a tablespoon of olive oil, make sure that they do not burn
    2. Fresh spinach wash with water and add to 2 liters of water along with the broth cubes. Cook on high heat for 10 minutes, stirring regularly
    3. Meanwhile, cut half a smoked chicken breast into small cubes or strips
    4. After 10 minutes of cooking, taste whether the spinach is cooked, if so you can add the chicken breast and mix it with a blender until a smooth soup remains. If the spinach is not completely cooked, let it boil for another 5 minutes before adding the chicken breast
    5. Add half a pack of Boursin, 250 ml of cooking cream and 4 tablespoons of parmesan cheese
    6. And blend everything again with a hand blender until you have a nice smooth low-carb creamy spinach soup, you find the spinach soup still on the thick side, then you can add more water to your liking.

    Vary, this low-carb creamy spinach soup can be combined well with fresh salmon, dill and parsley. By adding salmon, but with one operation you can add an extra filling soup before the evening meal.

    But also as a variation you can go for fried bacon, or just add a boiled egg. The possibilities are endless.
