Oven roasted vegetables

Eating vegetables is enjoying!

I find roasted vegetables from the oven delicious and certainly with the warmer weather I also like it with a good glass of wine and is just cozy on the table outside.

I often take the following types of vegetables: sweet potato, zucchini, sweet pointed peppers and red onion. Those colors and flavors together is really a party!

What you need for 4 people:

4 sweet potatoes
2 courgettes
3 sweet pointed peppers
2 to 3 red onions
olive oil

italian herbs
salty
pepper

Preparation:

Wash the vegetables and cut the vegetables into several pieces.

A cozy mix of vegetables.

Mix the vegetables with a few spoons of olive oil, Italian herbs and some salt and pepper.

Slide the baking tray with parchment paper and vegetable mixture in the middle of the preheated electric oven to 220 degrees and roast the vegetables between 15 to 20 minutes.

Serve them in a bowl on the table! Nice to see those colors!

At the table! Serve the roasted vegetables with a nice tender steak and a mixed salad with cucumber.
