Buckwheat risotto with peas
Ingredients for four people: 600 grams of fresh spinach, 400 grams of fresh peas, 300 grams buckwheat, three cloves of garlic, two tablespoons of olive oil, 800 grams of lean vegetable broth, one pinch of chili flakes, mint, pepper and salt
- Rinse buckwheat and drain
- Peel and chop the garlic
- Cut the mint into fine strips and keep it separate.
- Heat two tablespoons of olive oil and fry the garlic until golden brown in 2 minutes
- Stir in the buckwheat and cook for three minutes
- Pour in the broth, reduce the heat and let the buckwheat simmer for 20 minutes until all the broth is absorbed
