Rainbow Cake
My children are big on birthdays. Everything must be perfect, Mom must make them a cake of their choice.
This specific one was made especially with a friend of my daughters in mind. She is allergic to both eggs and dairy.
I had never made a cake without eggs and was quite concerned that after all the work to put this cake together, it wouldn't taste so good.
The cake was more dense than I normally prefer them, but overall it tasted just fine.
