Mexican bean dish with minced meat.
What you need for 4 people:
500 grams minced beef
2 onions
2 cloves of fresh garlic
1 red and/or yellow bell pepper
1 tin of corn
1 can of tomato paste
minced herbs
1 pot of 400 gram brown beans
1 bag of grated cheese
1 bag of tortilla chips natural
Preparation:
Preheat the oven to 200 degrees Celsius and place the grate in the middle of the oven.
Season the minced meat and fry the minced meat, roll and cook in a small frying pan or large frying pan in about 10 to 15 minutes.
Meanwhile, peel and chop the onions and add them to the minced meat and let them fry.
Wash the bell pepper and remove the seeds and cut the bell pepper into pieces.
Add them to the pan with minced meat and onion and let it fry.
Add the beans and stir in the minced meat, onion and bell pepper mixture and let it warm for a few minutes.
Add the corn and let it warm for a few minutes.
Add tomato paste and stir well into the mixture.
Heat the whole thing for another 1 minute.
Grab a baking dish and start filling the bottom of the dish with a first layer of mixture. Then sprinkle a little cheese on top. Place the tortilla chips over the cheese over the entire dish. Then start the second layer of mixture. Then another layer of cheese and tortilla chips. Then another third layer of mixture, cheese and tortilla chips. Then last a layer of cheese over the tortilla chips and put the baking dish in the middle of the oven.
Leave the baking dish in the oven for about 10 minutes.
When the cheese has melted and the tortilla chips a little crispy, take the dish out of the oven.
Serve on plates.
