Recipe tip from Mrs. Dot... Pea soup...
In cold weather, a delicious soup is always tasty and sitting by the stove with a bowl of warm soup is already top. Today I'm going for pea soup... freshly made and finished with spice cream cheese and crispy fried bacon. Or if you prefer not to eat meat, replace the bacon with bread croutons or fried onions or parsley... Opportunities enough because the soup itself is completely vegetarian.
What do you need for all this?
olive oil
Approximately 250g sliced soup vegetables (carrot, leek, onion and celery)
1 to 2 cloves of garlic, cut into pieces
1 cube of vegetable broth
1 kg deep-frozen peas
Water
Seasoning to your taste, pepper, salt and fresh lovage (or the more well-known variant: a bottle of maggie)
Tabasco if you want a little more spice


Method of preparation:
Put a good shot of olive oil in a high saucepan...
Fruit the vegetables together with the garlic and the broth cube.
When everything starts to get color and the smells are released, add the frozen peas.
This is well allowed to cook with regular stirring.
Only then add the water, the vegetables should be just below. (If the soup is too thick at the end you can add water, but it should not be too watery).
Already add a little spices if you use dried herbs.
All boil and remove the pan from the heat.
Mix the soup and season it with pepper, salt, lovage and possibly tabasco.
Back on the fire and possibly mix again.
