Sweet potato mash, I don't know if I would like it, but I came across a package at Albert Heijn. So long ago I made something with sweet potato. And then I didn't think it was so great. So this was a great opportunity to try out a new recipe without having to scurry all sorts of things together. Because I think that is a strong point of the waste packages that you see more and more in the various supermarkets nowadays.

The only thing you had to add yourself was some potato. (Two was enough to make 300 grams.) And 2 tablespoons of white wine vinegar. I don't have that in the house, so I just used ordinary vinegar.

This was a very easy recipe. You can boil the potato, sweet potato, leek, onion and ginger in 750 ml of water with the stock cubes in it. After fifteen minutes you add the green beans in pieces. Well, I thought it'd be better to fry the onions first. There's a little more flavor coming. And the green beans I also immediately let them cook, had the idea that otherwise they would not be cooked enough.

The red pepper came through at the end, and that was just enough.

I thought it was a nice stew, but next time I'm going to make it back in the pressure cooker. Because you have to pour the water and then you pour off taste, I think. Now there was so little of the ginger flavor left for my feeling. And to cook green beans in so much water I also find a bit unfortunate.
