The traditional dish of carbonara is not the way I make it, but just a little different!
For those who really want to make it traditional, the recipe:

Ingredients:

- 300 gr dried spaghetti
- 150 gr guanciale

- 100 gr Pecorino cheese
- 3 eggs + 1 egg yolk
- olive oil
- black pepper (freshly ground)
- salt

Preparation:

1. Bring water to a boil in a large saucepan. When the water boils, add a good pinch of salt.

2. Cook the spaghetti al dente (until tender) follow the cooking time of the package.

3. Cut the guanciale into small cubes and fry in a frying pan with a small dash of olive oil so that they become crispy.

4. Grab a bowl and put in it the 3 eggs and only the yolk of the 4th egg.

5.Grate the pecorino cheese and store the remaining cheese to garnish.
Add the grated cheese to the eggs and mix everything well until smooth sauce.

6. When the pasta is cooked, drain it partially. (Keeps some pasta water left)

7. Then add the pasta to the pan with the fried bacon and 2 tbsp pasta water.

Remove the pan from the heat.

8. Now pour the egg/cheese mixture into the spaghetti and mix everything thoroughly.
‼ Note: The pan must be really off the fire, otherwise you end up with scrambled eggs instead of. a nice smooth sauce ‼

Serve the pasta on a plate and sprinkle with freshly ground pepper and pecorino cheese.
